New Menu Additions

Check out some of the tasty new additions to our menu!

Sausage and Spinach Stuffed Pasta - Sausage, cheese, and spinach filled pasta topped with tomato sauce and parmesan.

Pepper Steak - Tender strips of beef with green bell peppers and tomatoes.

Chile Verde - A Mexican stew made from chucks of pork slow cooked in garlic, tomatillos, and chile peppers.

Chicken Cornbread Dressing - This dressing is wonderful as a main dish or as a side dish. It's our classic southern recipe - straight from the kitchen of my wife's "Mam-maw"!

European Meat Pie - Stewed chunks of beef and vegetables surrounded in Galette dough. English-style filling + french-style pastry = delicious!

Beef Burgundy (boeuf bourguignonne) - A classic french dish. Beef, mushrooms, and onions stewed in a rich beef stock and wine. Rich and delicious!

Tangy Dijon Beef - Slices of tender beef in a tangy dijon cream sauce. Served with rice.

European Meat Pie - Stewed chunks of beef and vegetables surrounded in Galette dough. English-style filling + french-style pastry = delicious!

Creole Beef Hash - chunks of tender beef, sauteed creole vegetables and potatoes.

Beef Carbonnade - Somewhat like classic beef stew, which is made with red wine, beef carbonnade is made by slowly simmering beef, onions, and a variety of vegetables with beer instead. Served over pasta or potatoes.

Ropa Vieja - Ropa Vieja is a very traditional Cuban entrée. It's shredded beef with tomatoes served over rice. The name literally means “old clothes” which is what the beef looks like after it is shredded. It is an incredibly flavorful entrée.

Hearty Tuscan Bean Stew with Sausage and Cabbage

Moroccan Chicken and Lentils - tender chicken, and lentils in a flavorful moroccan spice medley - coriander, cumin, and cinnamon. Served over basmati rice and topped with fresh parsley and toasted almonds.

Spanish Pumpkin and Bean Soup - Beans and dice ham or pancetta with sweet paprika, tomatoes, chopped pumpkin, pears, and green beans in a homemade chicken stock.

Greek Meatballs with Lemon-Herb Orzo - Tasty handmade lamb meatballs made served over orzo with a fresh lemon-Greek herb sauce (fresh oregano and parsley). Delicious!

Chicken Cassoulet with Acorn Squash - Chicken, smoked sausage, and bacon with winter vegetables in it's own gravy.

Indoor Souvlaki - A non-grilled, indoor version of a Greek "takeout" classic. Tender pieces of lemon and olive oil marinated pork, sliced tomatoes and onions. Served with rice. Also served with a side of tzatziki.

Price List

The prices listed below are for Chef Joel's labor. These prices are for 1-12 servings per meal. Save money! Get more servings! Ingredient cost is in addition to the Chef's fee.


The Two Dinner Affair - $70 plus ingredients (up to 24 servings)
Two complete meals. Each meal contains one large entree, one large vegetable side, and one loaf of bread. Each meal serves 1-12 people (you choose!).


The Trio - $95 plus ingredients (up to 36 servings)
Three complete meals. Two meals contain one large entree, one large vegetable side, and one loaf of bread. Plus one meal is a tasty, filling soup with a loaf of bread. Each meal serves 1-12 people.


The Traditional - $105 plus ingredients (up to 36 servings)
Three complete meals. Each meal contains one large entree, one large vegetable side, and one loaf of bread. Each meal serves 1-12 people (you choose!).


The Traditional Plus - $125 plus ingredients (up to 48 servings)
Four complete meals. Three meals contain one large entree, one large vegetable side, and one loaf of bread. Plus one meal is a tasty, filling soup with a loaf of bread. Each meal serves 1-12 people.


Entrees Only - $95 plus ingredients (up to 48 servings)
Four large entrees (usually including a starch) - each to serve 1-12 people.

All prices include menu planning, grocery shopping, preparation, cooking, and storing of all menu items, and clean up of your kitchen. Also included are non-perishable pantry items (flour, sugar, salt, etc). The chef brings all of his personal cooking tools. All you need to have is a sink, a little counter space, a stove, a refrigerator, and a freezer.

*A Little Note About Casseroles*
All casseroles are made with fresh ingredients. Each sauce is "homemade" and a chef specialty.

We are working to increase our entree options. We are currently developing our Vegetarian and Seafood sections and adding some Indian entrees.

Have a hankering for something particular and you don't see it on our menu? Just ask for it! Chef Joel can prepare *any* dish this side of the moon! He might have to make a few alterations to fit this style of service, but it'll taste delicious!

CHICKEN ENTREES

Chicken Fettucine Alfredo - Chicken and Fetuccine pasta al'Alfredo of Rome.

Chicken and Dumplings

Chicken Gumbo with Rice - Authentic Cajun Gumbo made with a dark roux, Cajun vegetables and tender chicken.

Chicken Jambalaya with Rice - Another traditional Cajun dish. Loaded with tasty chicken, ham, and cajun vegtables.

Chicken Cordon Bleu Casserole - A layer of seasoned rice with pieces of tender chicken and ham topped with a rich cream sauce and swiss cheese.

Chicken Cacciatore over Pasta - A delicious Italian-American dish with moist Chicken, delicious mushrooms, and a robust sauce.

Frequently Asked Questions

Q. So...what is a Personal Chef?
A. A Personal Chef designs a large menu, complete dinners, based on what you like to eat. I do all of the planning and grocery shopping, then I come to your kitchen and cook everything and package it in heatable containers and clean up after myself. All you have to do is warm the meals and they're ready to serve.

Q. What kind of food do you make?
A. Anything that you want! If you like Italian and Chinese, I'll prepare those for you and if you l want comfort food, like Shepherd's Pie, I'll do that as well. I do a great variety of meals based on what you want. Basically, I make a menu based on your likes and dislikes.

Q. Do you do catering?
A. As long as you can supply a kitchen, we can fulfill all of your culinary needs.

Q. It sounds expensive, is it?
A. The prices we charge are not designed to make us rich. We hope to bring this service into our community. Basically, we're charging as little as we can to still give you great, high quality food and still allow our family to survive.

Q. Do you do weddings and events?
A. Yes. As long as you can supply a kitchen, we can fulfill all of your culinary needs. We do free consultations to give you an estimated cost.

Q. What about Special Diets?
A. One of our services is helping you achieve your dietary goals or requirements. There is no dietary program too difficult for us, though some may require extra time and special ingredients resulting in extra service charges. We'll do anything, whether it's Weight Watchers, Atkins, Low Fat, Gluten-Free, Dairy-Free, Vegetarian, Vegan, or even Low Fat and Low Carb. We can and will tailor all of your meals to meet any special requirements.

Q. How do you store the food?
A. We refrigerate or freeze the meals that we cook in oven and microwave save containers, complete with warming instructions, so all you have to do is warm the meals up!

Q. Does the food taste "Freezer Burned"?
A. No. Freezing is a great way to preserve food. Food that is frozen is closest to fresh food in its natural color, flavor and nutritive qualities. We have been trained how to cook and store foods so that there is hardly any change. As an example, I know just how far to cook pastas so that when you thaw and warm it, it tastes as though it was just cooked for you al dente - not mushy at all like it would be in a grocery store TV dinner.

Q. What do I need to have in my kitchen?
A. All you need is an empty sink, a little counter space, a stove, and space in your refrigerator and freezer. We bring all other required cooking tools (pots, pans, utensils, and containers).
